Toaster oven, do not preheat, you will use only the top rack,
toast for 7 min ~ toaster oven rectangle pan 9” x 11” x 1/2”
20 Multigrain crackers of your choice (HEB Multigrain,
Saltines, GF Rice Crackers)
In single layer, place in bottom of pan, equal spaced, not
touching.
1 Can, 5 Oz, Pink Salmon, chunk style, skinless, boneless, in
water. Drained and flaked into bowl
1 tsp each of Fine Herbs, thyme, Hungarian Paprika, Garlic
Powder, Tarragon, Basil
2 Tbsp dill pickle liquid
2 Medium Claussen, mini, dill pickles. Sliced, then diced
into very small ¼ bits.
2 Tbsp Helmsman mayonnaise
2 cheeses, Swiss and mild cheddar, use a plane to achieve
thin planks of cheddar and cut square. I used a wedge of swiss, plane to
achieve thin strips, narrower than the square cheddar but longer by ½.
20 Louisiana jalapeno, sliced, peppers, drained. One slice for
each cracker
Have your entire above items ready, sliced, measured and cut
into shape before the assembly.
Assembly:
Then in a medium bowl of the flaked salmon, add all the
spices/herbs. Use a dinner fork to mix and break up any chunks. It should
appear dry. Add pickle liquid. Mix again. Add mayonnaise, but start first with
1 Tbsp, you may not need the second. It should mix up moist, not runny. You don’t
want a soggy cracker. Set aside.
Build upon the cracker the following in order.
cracker, then
a slice of jalapeno, place in center of cracker
measure a heaping teaspoon of the salmon mixture on top of the jalapeno slice
mild cheddar plane slice, square
swiss plan slice, diagonal
dry pinch of tarragon overall
a slice of jalapeno, place in center of cracker
measure a heaping teaspoon of the salmon mixture on top of the jalapeno slice
mild cheddar plane slice, square
swiss plan slice, diagonal
dry pinch of tarragon overall
Slide into toaster oven, toast setting, 7 min.
Check at 5 minutes, it may need the full 7 minutes, as cheese
should melt and drape tightly over the mounded salmon, some may bubble, but
none should brown.
Place on decorative sushi platter or dish.
Enough to feed 2 people. Easy, peazy when you are tired, don’t
have to think, often items you can find in your pantry or frig. Not to spicy,
warm punch, omega 3, quick and fun!
